Dumpukth is a traditional dish from the northeastern region of India, and it is typically made with mutton (goat meat). Here is a recipe for mutton dumpukth:

Ingredients:

• 1 kg mutton, cut into small pieces

• 2 cups water

• 2 tbsp ghee or oil

• 1 large onion, finely chopped

• 2 cloves garlic, minced

• 1-inch piece ginger, minced

• 1 tsp cumin seeds

• 2 bay leaves

• 1 cinnamon stick

• 4-5 green cardamoms

• 4-5 cloves

• 1 tsp turmeric powder

• 1 tsp red chili powder

• 1 tsp coriander powder

• 1 tsp garam masala

• Salt, to taste

• 1 cup thick coconut milk

• Chopped fresh cilantro, for garnish

Instructions:

• In a large pot, bring the mutton and water to a boil. Reduce the heat to medium-low and simmer until the meat is tender, about 1-1 1/2 hours.

• Heat the ghee or oil in a separate pan over medium heat. Add the onion, garlic, and ginger and cook until the onion is soft and golden brown, about 5-7 minutes.

• Add the cumin seeds, bay leaves, cinnamon stick, green cardamoms, and cloves and cook for another minute.

• Add the turmeric, red chili powder, coriander powder, and garam masala and cook for another minute.

• Add the cooked mutton and any remaining cooking liquid to the pan and stir well to combine.

• Add the coconut milk and bring to a boil. Reduce the heat to low and simmer until the sauce has thickened, about 10-15 minutes.

• Garnish with chopped cilantro and serve hot with rice or roti. Enjoy!

You can adjust the spices to taste, and you can also add vegetables such as potatoes, carrots, or peas to the dish if you like.
