ALOO GOSHT (MUTTON CURRY WITH POTATOES)

Well this dish is named for the two main ingredients in this curry, which are Aloo(potato) and gosht(meat),It is a curry that is probably made in every Pakistani household once a week or may be more.

Well most of the time the answer of this question...."AJ KYA PAKAYEIN...?"is Aloo gosht.🀭.or whenever we don't know what to make we say let's make aloo gosht....or or or when Suddenly guest are arriving so we say let's make Aloo gosht....hehehe so you can say that most favourite dish of most of the Pakistani families is Aloo gosht.

Some people call it aloo gosht while others call it aloo gosht ka salan; salan being the Urdu equivalent of gravy. The meat used is usually mutton (goat meat) but can also be beef, lamb or chicken. It is a simple dish to make using ingredients that will always be found in a Pakistani pantry, and loved by everyone. Even me, who rarely eat mutton (goat meat) . What I would do is ignore the meat and just eat the potatoes which become so flavourful after absorbing all those meat juices.

The recipe i follow is my Api's because that's what I grew up eating.Start off with Marination of the meat than frying off the onions and make them crispy.Fry off the onion, add the ginger garlic paste, meat and spices. Start bhonofying – caramelise the meat, and let the spices work their magic. Then just add potatoes, and water. Put the meat on simmer, and forget it about it for an hour till the meat is tender. Or you could use a pressure cooker, and have aloo gosht ready in 30 minutes. Whatever method you use, the end result is going to be scrumptious.

Some people prefer to eat thick gravy (just like me) and some want Shorba(whatsoup).some usw yogurt as i am going to use in my recipe....!😊

Lets just start the Recipe ☺️....!

  • Kewra water  1 tbsp (if you don’t have it don’t add but this will give your curry a nice aroma like bought from hotel)
List 2 Marination
  •  Kashmiri red chili powder   1 tbsp ( you can also use red chili powder 1 tsp but this will give curry nice colour)

How to make Aloo gosht:

  • So first of all what you have to do is take meat in the pan and marinate it nicely with all the ingredients which are mentioned above in marination list.
  • Add the desi ghee that will give you a nice aroma to your curry.but if you don't want to add it..that will be fine and marinate it for 1/2 hours if you have time.
  • Now what you have to do is turn on the heat of that pan and add 1/4 cup of water and constantly stir it so yogurt will not curdle.
  • Now add more water say one and half glass and leave it for boil.
  • now with lid,on very low heat cook it for almost 75 minutes or until meat is 70% done.add the potatoes.
  • Now cut the onions and fry them golden brown in hot oil and take them out make them crispy.
  • after 70 minutes, stir the meat to evaporate all juices on medium heat.
  • Now add all the other spices and also that crushed onions that we have fried and add one glass of water and stir it for 3 minutes.
  • Now add kewra and one more glass of water i am making lil bit thick Aloo ghost because i like it in that way but if you want more Shorba so u can add more water and cook it until the aloo is completely done.and meat should be tender.
  • potato meat curry is ready, add 2 tbsp of lemon juice give it a final stir, garnish it with coriander and ginger.
